Design and Characteristics of Novel Sensory and Nutritionally Oriented Olive, Seed, and Nut Virgin Oils’ Blendings

Abstract Virgin olive oil is considered a key component of the Mediterranean Diet, while nut and seed “cold‐pressed” oils stand out as an interesting ingredient due to growing consumer demand toward so‐called gourmet healthy oils. The main objective this work development characterization novel virgin vegetal based on blendings with obtained from seeds (sesame flaxseed) nuts (hazelnut pistachio) interest their peculiar nutritional organoleptic characteristics. Oil formulations elaborated 5% sesame achieve high content in vitamin E (842 mg kg −1 , 11.8 per standard 14 g dose, corresponding 80% recommended daily intake) 10% flaxseed level essential α‐linolenic acid (6.4%, 0.90 dose 66% intake). In addition, sensory analysis shows that blends enriched both 50% hazelnut 75% pistachio not only maintain typical aroma oil, but incorporate characteristic nutty, roasty, seed‐like, sweet attributes nuts, providing added value consumers.
